This time, I'm creating a pear-berry chicken burger with pepper wings and pear berry fries. Everything's
going to be peripery, better than Nando's, and trust me, you're going to love this recipe. First and
foremost, we're going to start with our chicken. I've got a giant chicken breast here, so grab your knife and cut the breast in the center. Place your knife just in the middle of the hand on the top and carefully
cut the breast in half.Let the knife do the work, so you've got these two beautiful fillets. Cut them in
half.
Now you want to grab the fillets and place them in this bag here. You can use parchment paper if you
want. It's not a problem. Now we're going to even out the shape with a rolling pin or a meat tenderizer
just to ensure our chicken cooks properly from all sides. Just turn the side over all right, so that looks perfect.Remove the chicken from this dish, where I'm also using some of the chicken wings, and we'll
dry brine it with a hefty pinch of salt.and simply gives it a great combination. Brining adds a lot of
flavor, so make sure you do it. Season it with salt and chill it for a few hours.
Now let's make our pepper marinade, so take your blender. For the lemon, I'm using the whole flesh of
the lemon instead of just the lemon juice. For the chilies, I'm using a blend of serrano and bird's eye
chili. The birds truly are the main crucial ingredient in our pear berry sauce, so make sure you definitely use it and with the garlictomato puree This will provide depth and richness to our sauce,
along with paprika powder and oregano (if desired), as well as a sufficient amount of salt and sugar to balance out the flavors.
Now you want to cover this with blending until nice and smooth. Oh my God again smoother all right,
so that looks great and let's get a taste of this sauce just to make sure all the seasoning is right. Have a taste here So that looks great, and let's taste it to make sure the seasoning is correct. Have a taste here. Smell it. Wow. That's amazing, just like Nando's. Then grab your chicken and pour half of the
marinade over it, mixing everything up thoroughly. We're going to use the marinade twice because
the color looks amazing and I'd love to mix it with my hands, but remember there's bird's eye chili
in there and that's going to burn you off all right, so once this is nicely mixed, just set it aside for around 20-30 minutes. I've just made a quick mayonnaise to go with our burgers and I'm going to throw
in some of that pepper marinade just to give it a really good mix.
So here we have our So a mix of bird's eye and red chili powder, white pepper, msg just a little bit,
I've got some dried oregano powder, just throw that in now. If you want, you can also use rosemary. Citric acid adds a bit of sourness. We're going to balance the spice with a bit of sugar and finally a
good touch of salt. Now give it a good mix and combine everything together all right. So that looks great. Have a little taste if you like and Now slowly start adding your wings. As I said, you want to
get a nice sear on your wings. All right, let's turn these. As you can see, I have a nice sail on this. All right, so once you have a nice set from both sides, just turn off the heat. Now remove those veins into this bowl. Add one and a half tablespoons of that marinade in there. Give that a really good mix again.
Take your baking tray and place the chicken wings on it, being sure to spread them out evenly. Drizzle a little oil over the top. And then there's this, which goes into the oven.Grab your grill and turn it to
medium. Add a little bit of oil and spread it around to make sure nothing sticks to the pan.
Add your fillets and let them grill for about two and a half minutes on each side. While I'm doing that, I'm going to add some more of this marinade to the other side.Add your fries to this bowl, along with a generous pinch of purple salt, and mix thoroughly. Grab your toasted bun, a good dollop of pepper
mayonnaise, some lettuce, tomatoes, some of these onions if you like, and the pear berry chicken on top of the bun, serving it with our lovely pear berry chicken wings, and don't forget the fries on the side.
All right folks, I'm going to try this.Eat the wings first, or I'm going to try this gorgeous pepper burger. The burger is so juicy and full of flavors. Take a look at that bismuth grilled to perfection. It's going
to become one of your favorites. The bird's eye chili really comes through, but the flavors are nicely
